I'll fall in with Onepoint: a 3" barrel is far more useful for any caliber to get the bullet up to speed. Especially a .357
Look up these differences in Ballistics by the Inch.
I owned a 2" .38 - and there was pretty good muzzle blast.
My .357 was 5" and had about the same.
I can't imagine what a .357 in 2" would be like.

Wasted powder is all.
Also, the sight picture will be meaningfully better with a 3".
And I think? the Taurus 605 3" comes with a real target front sight.
Basically, that one inch more won't matter in your holster at all, but it will matter in everything else.
