Here's a list of gun shows in New Mexico and West Texas.  It's kept reasonably current.

Louisiana one is already on there as a nationwide site... those are for all 50 states. Its rather redundant for me to list the same site for all 50 states.

Nationwide Sites:
http://www.gunshows-usa.com/

Updating the list again... and checking the broke link.

This one is in Burton Ohio, east of Cleveland.  He runs monthly & 24/7 auctions on-line.  He ships nationwide to FFLs.  I've bought several guns through him, but I drive to pick them up to save the shipping.

Pretty good show for people in the Delaware/Maryland/Virginia/D.C area. http://www.thenationsgunshow.com/home.html

Usually happens every 5 or 6 weeks. Prices and what you can find vary between the vendors. I've seen price differences between the stalls over $100 for the same exact stock guns. You can usually find a good deal here if you shop around and a lot of the local vendors are open to haggling. There hasn't been whole lot of AK/SKS parts/accessories there the past few years, though.
