Oh yes, you DEFINITELY want to do a "dry run" in non emergency conditions; it will give you priceless information on the lay of the land that you will never be able to gain from the car.

Also, keep in mind, these 'lists' are just ideas. ever evolving collections of what works for the writer. what I feel to be a NEED based on my environment my just be silly for Ranger. but then again, my condition is more suburban hand his. so our needs are different. And your like will be different as well.
The important thing is that you are taking the steps to get together a pack that will work for YOU.
Build it up as a thought exercise. Put it together and think through the walk. Then walk it. I'm willing to bet, the pack changes every time you walk home.
A little more water.
Different shoes.
a lighter pack.

welcome to the obsession.

My work doesn't allow me to be only work in one place. My job is odd and I'm always traveling from business to business. So it makes it hard to do a dry run. I know my city really well because of the amount of time I am on the road due to work but I still am not sure how heavy a EDC pack should be.  Should it be as heavy as a BOB?

No; the BOB is for the longer haul, and you are going to basically living out of it, so there will be sleeping gear,  a fair amount of food, etc; the single-trip local get home bag will have a lot less stuff; see the posts above, and look at those lists....

 As far as the dry run, go to the place you would least like to walk home from, or the furthest place you think you might be, and work it form there....you don't necessarily have to actually leave your vehicle there, you can catch a ride or something; the important thing is that you are using the exact gear you want for your kit;

And don't forget the get-home specific set of clothes and shoes......

I'm to big a sissy to carry more than 30#, so I base my bag on that.

Good example, just to get home bags are bare essentials, and in my mind work better in civilian camo than Rambo surplus. Think Bear Grylls minimums. I like some of the camel backs, covers water and storage for small items like handguns, knives, compass/gps, some paracord, poncho/liner and high energy snack/granola bars. I like to keep some tp with me too.  Shoes and clothes are up to necessity. I wear clothes everywhere I go so I will rely on maybe just extra socks. I try to keep the stuff to a minimum so I rely on needing less. Combo tools help a lot too. Carry only what the journey recquires. B.O.B. are more live out of like ranger said.

I have a mini emergency bag in my car since I travel. It contains some food items, collapsable water bottle, some various pills, foil mylar blanket, CO2 pellet pistol (I'm in MD, can't carry a pistol, but working on a "solution"), knife or two, some first aid stuff. And I have an army blanket, flashlights, and fireextinguisher in the car trunk.

Bug out bag in progress. Weapons- Keltec SU16CA, M57 Tokarev 7.62/9mm, food bars, water, medicines, matches, knives, two way radios in mylars, small books for the kids, LED flashlights that can regenerate power by crank or lever, plastic bags, mini binoculars, compass, Boy Scout book, and other stuff I can't remember right now.

And a kitchen sink.

I don't have a standard bag, I tailor the bag to the trip.

An example is I am going out of town on a training event soon.  It's a non-tactical type deal, all classroom.  Obviously if I was doing a tactical or firearms class I would have that gear as part of the deal.  The place I am headed to is a large city about two and a half hours away via highway.  I plan trips so that I have the gear I think I will need if walking home becomes my mode of transport.

For this trip I will have change of clothes of course, but go into the brush pants and shirt along with my "school" clothes, and combat boots and several sets of socks for hiking.  I'll take my standard CCW load-out of a Glock 9mm and a J frame .38, and add my Kel Tech sub2000 9mm carbine to the mix with four 31 round Glock  mags.  I'll have a fixed blade knife, fire making kit, Camelback 3 liter bladder type small pack, water purification tabs, Army poncho and poncho liner, bug juice, a few other items.

For a different trip I'd pack a different bag.
