How do you preserve meat for long term storage?

Howdy, folks.
What is your preferred method of preserving meat?  I'm fixin to buy a cow and want to make some of it last for daily use (freezing) and the rest for "just in case."  In the event that the power goes out, I don't want to depend on my freezer to preserve my "just in case" beef rations.

You can can meat, or you can salt it. Jerky's a good option. You can get detailed instructions for all of these w/google. Good luck Seamus.  8)

I have gone to a website and gotten info on how to "can" meat in jars.  Haven't tried it yet but printed it out and put it in my shtf binders.  Here is a link for you if you are interested, scroll down to where it says USDA Home Canning Guide, Canning Poultry, Red Meat and Seafood..

Just my opinion BUT, meat is a difficult thing to preserve. Pressure canning and drying/jerkey is about the only way to insure a safe product. You will get more usable protein and fuel from other products such as beans and grains. they are easier to store and preserve.

Just a fyi, if you dont have a pressure canner yet you better get one. and stock up on canning supplies. they went quick around here last year around harvest time, i expect the same or worse this year.

If a source of protein is your thought, think of alternatives, like peanut butter. Also (as bad as it sounds) crickets are a great source of protein and pound for pound, pack a lot more than beef.

Otherwise, I agree that canning is probably the best method. Be sure to rotate your inventory though if it goes unused.

You guys should really be checking out TVP. Textured vegtable protein. Its cheep, and goes a long way. It keeps for a Looooong time.

Sounds good but I try to limit my soy intake as much as possible because I dont need any help growing man boobs ;)

I know that there are conflicting reports on the affects of the estrogenic qualities in soy, even some that say it has anti cancer qualities, but theres enough questionable info about it for me to be a little leary, so I'm not bashing soy or trying to start any kind of conflict here, before anyone flames me ;) Just my opinion thats all. Kinda sucks because I do like the boca burgers and other boca soy stuff.

I guess in a long term eotwawki situation food is food, maybe I just have soy phobia. ;)

Thats it.  :lol: A good friend of mine was the Director of Health for Japan. He told me they did extensive research in this area and found no such symptoms i the japanese population.
