depends.  How far you going?  How long is it taking you? What is waiting when you get there? What are you carrying?  There is something to be said for that 50 cartridge box of 22 long rifle that fits in any pocket.  You could carry hundreds of rounds of 22LR without even noticing the weight.  Assuming that you are asking about 7.62x39 for an SKS (because this is an SKS board) then the 200rd chest bandoleer on 10 rd stripper clips should get you to your first cache site.

In a "bug out" situation,  How many rounds to carry?

50?
100?
Rounds are heavy.

 The first serious answer here is... How ever many you think it may take you to get back home. This becomes two answers in one to a question you didn't ask. - I think what everyone here is saying is that you need to bug in. Home advantage is best. If bugging out is a better choice then you probably live in an undesirable location.

If it gets so bad that I can't get away from Fort Home because of a hurricane, down trees, high water, then that's an enhanced perimeter.

 Yes to this! And... You may live in an undesirable location to begin with! Hurricanes and high water are things we watch on the news and never experience. - We do have tornadoes here. But we also have basements.

I carry 50 rounds in my truck for my EDC,not counting the 2 full mags I carry in the GB, just in case I'm at work when SHTF, but I'd be trying to make it back to the fort also.
When the SHTF you better already have it at hand, because it won't be on the shelves when you get to the Wal-Mart land.

Night fishing I carried a 1911/8rds, 7/8rd mags, box of ammo in the glove box.
